1 cup balsamic vinegar
2 cups bocconcini cheese (I used mini bocconcini)
2 cups cherry tomatoes
1 bunch basil (fresh)
½ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)


Instructions

Step 1. Make the balsamic glaze by adding the balsamic vinegar to a small skillet. Cook over medium heat for about 15 to 20 minutes, or until the liquid has reduced by half.

Step 2. Assemble the skewers by threading a mini bocconcini cheese, a fresh basil leaf, and a cherry tomato onto each toothpick. Repeat this process until all ingredients are used.

Step 3. Season the skewers gently with salt and pepper to taste.

Step 4. Drizzle the warm balsamic reduction over each Caprese bite using a teaspoon just before serving.
