Ingredients
1 pound dried pasta (fusilli, rotini, or penne work best)
2 cups cherry or grape tomatoes, halved
8 ounces fresh mozzarella pearls (ciliegine), drained
1/2 cup fresh basil leaves, gently washed and patted dry
For the Balsamic Dressing:
1/3 cup extra-virgin olive oil
3 tablespoons thick balsamic glaze (or balsamic reduction)
1 clove garlic, finely minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Instructions
Boil salted water and cook pasta until al dente, following package directions.
Drain and rinse the pasta immediately with cold water to cool it and stop cooking. Shake off excess water and place the cooled pasta in a large serving bowl.
Prepare the dressing in a small jar or bowl by combining olive oil, balsamic glaze, minced garlic, salt, and pepper. Whisk or shake until well combined.
Add the halved tomatoes and mozzarella pearls to the bowl with the pasta.
Pour the dressing over the salad and gently toss to coat everything evenly.
Stack basil leaves, roll them tightly, and slice thinly into ribbons.
Gently mix the basil ribbons into the salad right before serving.
Taste and adjust seasonings if needed. Serve chilled or at room temperature.
Notes
For pasta salads, it’s best to cook the pasta just until it’s tender but still holds its shape. Overcooked pasta can become mushy when chilled and tossed with other ingredients.
Ensure the pasta is well-drained after rinsing. Excess water will dilute the dressing and make the salad watery.
The bright, aromatic flavor of fresh basil is integral to a classic Caprese salad. Dried basil simply won’t provide the same vibrant taste.
The ratio of olive oil to balsamic vinegar can be adjusted based on your preference. If you like a tangier salad, add a little more balsamic; if you prefer it milder, increase the olive oil.
