Ingredients
1 can refrigerated biscuit dough (8 count)
1 cup prepared vanilla pudding
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
Oil (for frying)
Instructions
Heat 2 inches of oil in a pot to 350F. Fry biscuit rounds for 1-2 minutes on each side until they are golden brown. Remove and drain them on paper towels.
After the donuts have cooled, use a skewer to make a small hole in the side of each one. Fill the center of each donut with vanilla pudding.
Gently heat the heavy cream until it just begins to simmer. Pour the hot cream over the semi-sweet chocolate chips, let it sit for 5 minutes, then whisk until you have a smooth ganache.
Dip the top of each filled donut into the chocolate ganache and set them aside to allow the chocolate to firm up.
Notes
Don’t be tempted to add too much extra flour if the dough is a bit sticky. Proper kneading will develop the gluten, making it more manageable.
A slightly warmer environment helps the dough rise effectively. An oven that has been briefly turned on and then turned off can be a great spot.
Maintaining the correct oil temperature is crucial for perfectly fried donuts. Too cool and they’ll be greasy; too hot and they’ll burn before cooking through. Use a thermometer if possible.
Stirring the custard constantly prevents scorching and ensures a silky smooth texture. If it seems too thin after cooking, it will thicken more as it cools.
Adjust the liquid in the glaze as needed. If it’s too thick, add a tiny bit more milk/water. If it’s too thin, add a little more confectioners’ sugar.
