Ingredients
1/2 pound high-quality Kosher Beef Salami, cut into 1/2-inch thick cubes
1 (8 oz) container of fresh mozzarella balls (ciliegine), drained
1 jar (14 oz) marinated artichoke hearts, drained and halved
1 pint cherry or grape tomatoes, washed
1 cup pitted Kalamata olives or large green olives
1/4 cup fresh basil leaves
2 tablespoons balsamic glaze
10–12 wooden or bamboo skewers (6-inch length)
Instructions
1. Prepare your assembly area by placing the beef salami cubes, mozzarella balls, marinated artichoke hearts, cherry tomatoes, olives, and fresh basil in separate small bowls.
2. Thread a cherry tomato onto the sharp end of a wooden skewer, pushing it down to the base.
3. Fold a fresh basil leaf in half and thread it onto the skewer next to the tomato.
4. Add a cube of beef salami to the skewer, sliding it down to rest against the basil.
5. Thread a mozzarella ball onto the skewer.
6. Add half of an artichoke heart.
7. Finish the skewer by placing a Kalamata olive at the top.
8. Continue this threading sequence (Tomato -> Basil -> Beef Salami -> Mozzarella -> Artichoke -> Olive) until all skewers are complete.
9. Arrange the finished skewers on a large platter in an alternating pattern.
10. Drizzle the entire platter lightly with balsamic glaze just before serving.
11. Serve cold or at room temperature.
Notes
For the best texture and flavor, use fresh mozzarella balls packed in water. Avoid pre-shredded mozzarella as it often contains anti-caking agents that affect its meltiness and texture.
Opt for a good quality Italian-style salami. Pepperoni can also work but will lend a different, spicier flavor profile.
