This Miso Butter Roasted Turkey is a delightful twist on a classic holiday centerpiece, offering a deeply savory and umami-rich flavor profile that will have everyone asking for seconds. The combination of salty miso, sweet honey, and aromatic garlic and ginger creates a beautifully roasted bird with incredibly tender and juicy meat.
Ingredients
1 whole turkey (12–14 lbs), thawed and giblets removed
1/2 cup (1 stick) unsalted butter, softened
1/4 cup white miso paste
2 tbsp soy sauce
4 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp honey
1 yellow onion, quartered
1 head garlic, halved horizontally
2 cups low-sodium chicken broth
Black pepper to taste
Instructions
Prepare your oven by preheating it to 325F (165C) and setting up a large roasting pan with a rack.
Create a smooth compound butter by combining softened butter, white miso paste, soy sauce, minced garlic, grated ginger, honey, and black pepper.
Ensure your turkey is completely dry by patting it with paper towels.
Carefully lift the turkey skin and spread half of the miso butter onto the breast meat, then coat the entire outside of the turkey with the remaining butter.
Fill the turkey cavity with the quartered yellow onion and halved garlic head, and pour chicken broth into the bottom of the roasting pan.
Roast for 3 to 3.5 hours, basting it every 45 minutes, until the internal temperature reaches 165F (74C) in the thickest part of the thigh.
Let the turkey rest, covered with foil, for 20-30 minutes before you carve it.
Notes
For the crispiest, most golden skin, make sure your turkey is absolutely dry before applying the miso butter. Pat it down thoroughly with paper towels.
Ensure your butter is truly softened, not melted, so it blends smoothly with the other ingredients and spreads easily.
If you notice one part of the turkey browning faster than others, you can loosely tent that section with foil.
Resist the urge to carve immediately. Letting the turkey rest allows the juices to settle, resulting in incredibly moist meat.
