Ingredients
• 1 cup napa cabbage kimchi, drained and finely chopped
• 8 oz cream cheese, softened
• 1/2 cup sour cream
• 2 cups mozzarella cheese, shredded
• 1 cup sharp cheddar cheese, shredded
• 2 cloves garlic, minced
• 1 tbsp gochujang (Korean chili paste)
• 1 tsp sesame oil
• 2 green onions, chopped
• Tortilla chips, pita chips, or crackers for serving
Instructions
First, warm your oven to 375F (190C) and prepare a small baking dish or an 8-inch cast-iron skillet.
Next, in a generous bowl, blend the softened cream cheese, sour cream, minced garlic, gochujang, and sesame oil until completely smooth.
Then, gently stir in the finely chopped kimchi, 1.5 cups of mozzarella, 3/4 cup of cheddar, and half of the chopped green onions.
After that, spread the kimchi cheese blend into your prepared dish and level the surface with a spatula.
Following this, evenly distribute the reserved mozzarella and cheddar cheeses over the top.
Bake for 20 to 25 minutes, or until the dip is wonderfully bubbly and the cheese topping is melted and delicately browned.
Finally, scatter the remaining chopped green onions over the top and serve warm with your favorite tortilla chips or crackers.
Notes
Drain Your Kimchi Well: For the best texture and to avoid a watery dip, make sure to thoroughly drain your chopped kimchi before adding it to the cheese mixture. You can even gently press it with paper towels.
Don’t Overmix: Once you’ve added the kimchi and cheeses to the cream cheese mixture, stir gently until just combined. Overmixing can sometimes make the dip a bit greasy.
Watch for Bubbles: The bake time is a guideline. Look for the edges of the dip to be visibly bubbling and the cheese on top to be melted and starting to turn golden brown. This indicates it’s perfectly ready.
