Ingredients

2 tablespoons olive oil
½ yellow onion, halved and thinly sliced
1 small red bell pepper, sliced
1 ½ cups sliced cremini mushrooms, from about ½ an 8-ounce package
1 teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 pound ground mild sausage
1½ cups marinara sauce
1 ½ cups finely shredded Italian cheese blend, about 4 ounces
6 hoagie rolls
Fresh Italian parsley, optional for garnish


Instructions

1. Saut onions and peppers in olive oil until crisp-tender. Add mushrooms and seasonings, then cook until softened. Set aside.

2. Cook sausage in the skillet until done, breaking it up. Drain grease, then add marinara sauce and simmer.

3. Broil split hoagie rolls until lightly browned and toasted. Hollow out the bottom halves.

4. Preheat oven to 375F.

5. Sprinkle cheese on the bottom roll halves. Fill with sausage mixture, veggies, and remaining cheese. Garnish with parsley if desired.

6. Cover sandwiches with foil and bake for 10 minutes until cheese has melted.

Notes

Don’t overcrowd the skillet with the vegetables when sautéing. Cook them in batches if necessary for even cooking.
