10 large eggs
1 cup full-fat cottage cheese
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup all-purpose flour
1 tsp baking powder
1/4 cup unsalted butter, melted
1/2 cup diced bell peppers
2 cups fresh baby spinach, chopped
Salt and black pepper to taste


Instructions

Prepare your oven to 350F (175C) and lightly grease a 9×13-inch baking dish.

In a generous bowl, thoroughly whisk together your eggs, melted butter, salt, and black pepper until smoothly combined.

Process the cottage cheese until smooth using a food processor or blender, or simply stir it into the egg mixture as is for added texture, then incorporate the flour and baking powder until the batter is smooth.

Gently fold in the shredded cheddar and Monterey Jack cheeses, diced bell peppers, and chopped spinach.

Pour the blended egg mixture into the prepared baking dish, smoothing the top with a spatula.

Bake for about 35 to 40 minutes, or until the edges are golden brown and the center is fully set.

Allow the bake to rest for 10 minutes before cutting into portions and serving.

Notes

To be sure your egg bake is fully cooked, insert a knife or toothpick into the center. It should come out clean. The edges should also appear set and slightly golden.

Ensure your baking dish is well-greased before pouring in the mixture. A light coating of butter or non-stick cooking spray works wonders.

If you’re not a fan of cottage cheese texture, a quick pulse in a blender or food processor before adding it to the eggs will make it disappear completely, leaving only its creamy magic behind.

While we want it set, overbaking can lead to a drier egg bake. Keep an eye on it towards the end of the baking time.

Resist the urge to cut into it immediately. The 10-minute rest allows the structure to set properly, preventing a crumbly mess.
