Ingredients
1 cup (2 sticks) unsalted butter (melted)
2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 tsp salt
1/2 tsp peppermint extract
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1/2 cup crushed peppermint candy canes
Instructions
Preheat your oven to 350F (175C) and prepare a 9×13-inch baking pan with parchment paper.
In a large bowl, combine melted butter, sugar, eggs, vanilla extract, and peppermint extract. Whisk until well combined and smooth.
Gradually whisk in cocoa powder, flour, and salt until the batter is smooth.
Gently fold in the semi-sweet chocolate chips, being careful not to overmix.
Spread the batter evenly into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
While the brownies are still warm, sprinkle the white chocolate chips over the top and let them melt for about 3 minutes.
Smooth the melted white chocolate into an even layer with a spatula.
Scatter the crushed peppermint candy canes over the white chocolate topping.
Let the brownies cool completely in the pan before cutting into squares.
Notes
Measure flour correctly by spooning it into the measuring cup and leveling it off. Scooping directly from the bag can pack too much flour in, leading to dry brownies.
Don’t overmix the batter once you add the flour; mix just until combined to avoid developing gluten, which can result in tougher brownies.
