Description

8 oz cream cheese, softened
1 oz dry ranch seasoning packet
4 large flour tortillas
2 tsp fresh chopped dill
1 medium cucumber, sliced thin


Instructions

1. Chop the fresh dill and thinly slice the cucumber.

2. In a small bowl, combine the softened cream cheese and ranch seasoning packet.

3. Spread of the cream cheese mixture evenly onto each flour tortilla.

4. Sprinkle tablespoon of the chopped dill over the cream cheese mixture on each tortilla.

5. Arrange the cucumber slices over the dill in a single layer.

6. Starting from one end, tightly roll each tortilla until the other end is met.

7. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour, or until firm.

8. When ready to serve, unwrap the chilled tortilla logs. Cut off 2 inches from each end using a serrated knife, then slice the remaining log into 6 equal portions.

9. Arrange the pinwheels flat on a serving platter and enjoy.

Notes

The success of your pinwheels hinges on slicing the cucumbers very thinly. If your knife skills aren’t quite up to par for this, a mandoline slicer is your best friend for consistent, paper-thin slices.

Ensure your cream cheese is properly softened. Cold cream cheese is difficult to spread evenly and can lead to lumps in your filling.

When spreading the cream cheese, try to keep it within the boundaries of the cucumber strip to prevent excessive mess when rolling and to keep the pinwheels looking neat. Don’t overfill each cucumber strip; a thin, even layer of cream cheese is best for easy rolling and a neat final product. Too much filling can cause the cucumber to tear.

Roll the cucumber strips firmly enough to create a neat spiral, but gently enough to avoid tearing the cucumber. The cream cheese acts as a binder.

Don’t skip the chilling step. A brief period in the refrigerator helps the pinwheels set, making them easier to serve and preventing them from unrolling.
