Description

Ingredients

3 large eggs
¼ cup milk of choice
1 pinch salt more or less to taste
1 pinch freshly ground black pepper more or less to taste
1 teaspoon neutral-flavored oil avocado oil, olive oil, etc.
⅓ cup shredded cooked chicken or diced cooked chicken
¼ cup shredded cheddar or shredded gruyere
¼ cup finely chopped fresh spinach
24 tablespoons diced roma tomatoes to taste


Instructions

1. Whisk eggs, milk, salt, and pepper until combined.

2. Heat oil in skillet over medium-low heat until shimmery.

3. Pour egg mixture into skillet and spread evenly.

4. Cook for 2 to 3 minutes, until set but still slightly wet.

5. Top one half with chicken, cheese, spinach, and tomatoes.

6. Fold omelette and cook briefly to meld.

7. Slide onto plate and serve warm.

Notes

Use a non-stick skillet to prevent the omelette from sticking.

Don’t overcrowd the pan. If necessary, cook the chicken / saute the spinach in batches to ensure even cooking.

Adjust the cooking time based on your stovetop.

Feel free to add a touch of cheese immediately after folding the omelette to help it melt.
