¾ cup powdered sugar (90g)
¾ teaspoon salt
1 ½ cups unsalted butter (285g)

Instructions

Preheat your oven to 350F / 175C. Line baking sheets with parchment paper and set aside.

Whisk together the flour, cocoa, powdered sugar, and salt. Set aside.

Beat the butter and vanilla until creamy. Add the flour mixture, mixing until just combined. Chill the dough if needed.

Roll half the dough into a 10×10 inch rectangle about thick between wax paper. Trim the edges to make a 9×9 inch square. Mark 3 across and 3 down for 9 squares. Press the ruler to the markings but do not cut through the dough. Prick each cookie. Freeze. Repeat with the second half of the dough.

Remove from the freezer and break the squares apart. Place on the prepared baking sheets. Bake 14 to 16 minutes until firm. Cool completely.

Assembly
Pair cookies by size. Turn one cookie upside down. Set aside.

Remove the ice cream from the freezer. Cut into 9 equal portions.

Place one ice cream portion on the bottom cookie. Top with the second cookie.

Freeze until hard. Wrap each sandwich in foil and store in the freezer.
