This Decadent Gingerbread Bundt Cake recipe features deep, spicy gingerbread flavors and a wonderfully moist crumb, perfect for the holidays and topped with a luscious cream cheese glaze.
Ingredients
3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
3/4 cup (1.5 sticks) unsalted butter, softened
1 cup packed dark brown sugar
2 large eggs
1 cup dark molasses
1 cup hot water or warm milk
Cream Cheese Glaze: 4 oz cream cheese (softened), 1 cup powdered sugar, 2 tbsp milk, 1/2 tsp vanilla
Instructions
Preheat your oven to 350F (175C) and generously grease and flour your Bundt pan.
Combine the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a bowl.
In a separate large bowl, cream together the softened butter and dark brown sugar until light and fluffy.
Mix in the eggs one by one, followed by the dark molasses until smooth.
Gradually add the dry ingredients and hot water or warm milk in alternating batches, mixing on low speed until just combined into a smooth batter.
Pour the batter into the prepared Bundt pan and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
Once cooled, finish with the cream cheese glaze.
Notes
Using softened butter is key to achieving a light and fluffy cake batter when creamed with sugar.
The molasses content in dark brown sugar adds moisture and a deeper, richer flavor profile to the gingerbread.
This liquid gold is essential for that classic gingerbread taste and contributes significantly to the cake’s moistness and color.
This helps to bloom the spices and dissolve the sugars, contributing to a tender crumb and ensuring all ingredients are well incorporated.
For a little textural contrast, consider folding in 1/2 cup of finely chopped crystallized ginger or even some toasted pecans into the batter before baking.
If you prefer a less intense molasses flavor, you could experiment with using an equal amount of light molasses, though the color and depth of flavor will be slightly altered.
