Decadent Fudge Filled Chocolate Chip Cookie Bars are the ultimate dessert, perfect for any occasion.
Ingredients
Cookie Bars:
¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
¾ Cup Brown Sugar (140g)
½ Cup Sugar (100g)
2 teaspoon Vanilla Extract
2 Large Eggs
2 and ⅔ Cups All Purpose Flour (320g)
1 teaspoon Baking Powder
⅛ teaspoon Salt
1 Cup Chocolate Chips (180g)
Chocolate Fudge:
1 Tin Condensed Milk (397g)
1 teaspoon Vanilla Extract
2 and ¼ Cups Chocolate Chips (405g)
Instructions
1. Melt chocolate chips and mix them into condensed milk and vanilla extract. Set aside.
2. Preheat oven to 180C (350F) and grease a 9″x13″ baking tin.
3. Beat butter, brown sugar, and sugar. Mix in eggs and vanilla extract.
4. Add flour, baking powder, and salt. Then, mix in chocolate chips.
5. Spread half of the cookie dough in the pan.
6. Pour the chocolate fudge over the dough.
7. Top with the remaining cookie dough.
8. Bake for 20-30 minutes until golden and set.
9. Refrigerate until set, then cut into squares or enjoy immediately.
Notes
Don’t Overmix: When making the cookie dough, mix the dry ingredients into the wet ingredients until just combined to ensure the bars are tender.
Room Temperature Ingredients: Always make sure your butter and eggs are at room temperature for optimal mixing and texture.
Cool Completely: Allowing the cookie bars to cool completely before cutting is very important to make sure the fudge sets.
Use a Sharp Knife: Use a sharp knife for clean cuts when slicing the bars.
Line the Pan: Lining the baking pan with parchment paper, with overhang, makes it easier to remove the baked bars for cutting.
