Ingredients

1 small green cabbage (about pounds, shredded)
1 Tbsp sugar
1 tsp salt
45 small cucumbers (or 1 English cucumber)
1 medium carrot (grated)
1 small onion
1 handful dill (about ½ cup chopped)
3 Tbsp olive oil
2 Tbsp white vinegar


Instructions

Put the shredded cabbage into a large mixing bowl, then sprinkle in the sugar and salt.
Gently massage the cabbage with your hands for about one minute until it softens and starts to release its natural juices.
Add the sliced cucumber, grated carrot, chopped onion, fresh dill, white vinegar, and olive oil to the bowl, then toss well to combine all the ingredients.
Cover the bowl and place it in the refrigerator for at least 30 minutes so the flavors can blend beautifully before you serve.

Notes

For the best texture, shred the cabbage finely. A mandoline slicer can be helpful, but a sharp knife works perfectly too.

If your cucumber has large seeds, you may want to scoop them out before slicing to avoid a watery salad.

If the dressing seems too thick, you can add an extra teaspoon or two of white vinegar or a tablespoon of water to reach your desired consistency.

Always taste the dressing before combining it with the vegetables and adjust seasonings, sugar, or vinegar to your preference.
