Crockpot Salsa Chicken

  • Total Time: 6 hours 10 minutes - 8 hours 10 minutes
  • Yield: 4-6 servings 1x

Description

Whipping up a flavorful and incredibly easy meal for your family has never been simpler than with this Crockpot Salsa Chicken. Tender, shredded chicken is infused with the zesty goodness of salsa and a touch of green chile heat, making it a weeknight dinner superhero. This versatile dish is a crowd-pleaser that comes together with minimal effort, perfect for those busy evenings when you crave something delicious without the fuss.

Ingredients

Scale

3 chicken breasts
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 (15.5 ounce) jar salsa
1 (4 ounce) can chopped green chile peppers

Instructions

Put the chicken breasts in the bottom of your slow cooker.

Sprinkle them evenly with chili powder, garlic powder, ground cumin, and onion powder.

Pour the salsa and chopped green chile peppers over the chicken.

Cover the slow cooker and cook on the Low setting for 6 to 8 hours. The chicken is ready when it is very tender and has reached an internal temperature of 165 degrees F.

Once cooked, carefully remove the chicken from the slow cooker and place it on a clean cutting board or in a bowl.

Using two forks, shred the chicken until it reaches your desired consistency.

Return the shredded chicken to the slow cooker and stir it into the flavorful sauce until well combined.

Notes

We’re using boneless, skinless chicken breasts here for ease and tenderness. Make sure they are roughly the same size for even cooking.

Your favorite jarred salsa will work perfectly! Choose a medium heat if you like a little kick, or a mild version for a gentler flavor. The quality of your salsa will really shine through.

These small cans of diced green chiles add a wonderful subtle heat and a distinct Southwestern flair without being overpowering.

Ensure your chicken breasts fit comfortably in a single layer at the bottom of the slow cooker. Overcrowding can lead to uneven cooking.

For the easiest shredding, let the chicken rest for a few minutes after removing it from the slow cooker. It will still be warm enough to shred beautifully.

If you prefer a thicker sauce, you can remove the shredded chicken, strain some of the liquid into a small saucepan, and reduce it slightly over medium heat before returning the chicken to the pot.

The beauty of this recipe is the tender, fall-apart chicken. Cooking on Low for the recommended time ensures this result. Avoid the urge to rush it on High, as it can sometimes result in drier chicken.
