  • 1 lb ground sausage (mild or hot)
  • 1 lb baby red potatoes (unpeeled, thinly sliced)
  • 1 (14.5 oz) can fire-roasted diced tomatoes (undrained)
  • 1 (14.5 oz) can kidney beans (drained/rinsed)
  • 1 1/2 cups frozen corn, 1 cup yellow onion (diced)
  • 1 green bell pepper (chopped), 1 cup Colby Jack cheese
  • 2 tsp minced garlic, 1 tbsp olive oil
  • 1/2 tsp chili powder, 1 tsp salt, 1/2 tsp pepper

Instructions

Brown: Sauté ground sausage and onion in oil until browned. Season with salt and pepper. Let the meat get slightly crispy for extra flavor.

Layer: Transfer sausage to the slow cooker. Add sliced potatoes, bell pepper, kidney beans, corn, undrained tomatoes, garlic, and chili powder.

Cook: Stir well and press into an even layer. Cover and cook on High for 2–4 hours (or Low for 4–6 hours) until potatoes are fork-tender.

Melt: Stir gently, sprinkle with Colby Jack cheese, and cover for 5–10 mins until melted. Garnish with cilantro and sour cream.

Notes

Potato Prep: Slice red potatoes thinly and uniformly so they cook through at the same rate and absorb the sauce properly.

Keep the Juice: Do not drain the tomatoes! That liquid is essential for steaming the potatoes to tenderness inside the slow cooker.

Storage: Flavors improve after sitting overnight. Store in an airtight container in the fridge for up to 4 days.
