Description
These crispy smoked paprika roasted chickpeas are an utterly addictive snack, bursting with savory, smoky flavor and a satisfying crunch that’s perfect for munching. They are incredibly simple to whip up, making them the ideal go-to for a healthy treat or a delightful appetizer.
Ingredients
2 cans (15 oz each) chickpeas (garbanzo beans)
2 tablespoons extra-virgin olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
A pinch of cayenne pepper (optional, for heat)
Instructions
1. Preheat your oven to 400F (200C) and line a large baking sheet with parchment paper.
2. Rinse the chickpeas under cold water then drain them.
3. Spread the drained chickpeas on a kitchen towel or paper towels and pat them completely dry. Remove any loose skins.
4. Place the dried chickpeas in a large bowl.
5. Drizzle olive oil over the chickpeas and toss to coat.
6. Mix the smoked paprika, cumin, garlic powder, salt, pepper, and cayenne pepper (if using) in a small bowl.
7. Sprinkle the spice mixture over the chickpeas and toss until evenly coated.
8. Spread the chickpeas in a single layer on the prepared baking sheet, ensuring they don’t touch.
9. Roast for 25 to 30 minutes, shaking the pan gently every 10 minutes for even roasting.
10. Turn off the oven, leave the door slightly ajar, and let the chickpeas cool inside for 15 minutes to maximize crispiness. Serve warm or store in an airtight container.
Notes
Ensure your chickpeas are in a single layer on the baking sheet. Overcrowding can lead to steaming rather than crisping.
The chickpeas are ready when they are golden brown and have a firm, crispy exterior. You can test one by letting it cool and then tasting it for crunch.
Feel free to adjust the amount of smoked paprika and garlic powder to suit your taste preferences.
Allow the chickpeas to cool on the baking sheet for at least 5-10 minutes after they come out of the oven to maximize their crispiness.
