Ingredients
2 pounds chicken wings (flats and drumettes separated)
1 tablespoon baking powder (aluminum-free, do not use baking soda)
1 teaspoon kosher salt
1/2 teaspoon garlic powder
For the Sauce:
1/4 cup (1/2 stick) unsalted butter, melted
4 cloves garlic, finely minced
1/3 cup freshly grated Parmesan cheese (plus extra for serving)
2 tablespoons fresh parsley, finely chopped
1/2 teaspoon black pepper
Instructions
1. Heat your oven to 425F (220C). Prepare a baking sheet by lining it with foil and placing an oven-safe wire rack on top. Coat the rack well with non-stick spray.
2. Dry the chicken wings thoroughly with paper towels. This step is important for achieving crispiness.
3. In a bowl, combine the dry wings with baking powder, salt, and garlic powder. Toss until each wing is evenly coated.
4. Place the wings in a single layer on the prepared wire rack, ensuring there’s a little space between them.
