Description

3 lbs Russet or Yukon Gold potatoes, peeled and cut into 1.5-inch cubes
1/4 cup melted beef tallow
1 tsp garlic powder
1 tsp dried rosemary, crushed
1/2 tsp dried thyme
1 tsp coarse sea salt
1/2 tsp black pepper
Fresh parsley, chopped for garnish


Instructions

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a large pot, cover the cubed potatoes with cold water and bring to a boil. Cook until just tender when pierced with a fork, about 10-15 minutes. Drain thoroughly and gently shake the pot to rough up the edges of the potato cubes.
In a large bowl, gently toss the roughed-up potato cubes with the melted beef tallow, garlic powder, crushed dried rosemary, dried thyme, coarse sea salt, and black pepper. Ensure each piece is well coated.
Spread the seasoned potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
Roast for 45-55 minutes, turning them occasionally, until deeply golden brown and tender on the inside. Use a spatula to turn them, letting them sit undisturbed for 15-20 minutes between turns for maximum crispiness.
Remove from the oven, garnish generously with fresh chopped parsley, and serve immediately.

Notes

Don’t overcrowd the pan. Giving your potatoes space on the baking sheet is key to achieving maximum crispiness. If the pan is too full, the potatoes will steam instead of roast.

The rough-up is key. That gentle shaking of the drained potatoes after boiling is essential. Those little nicks and crannies are where the magic happens, creating pockets of crispiness.
