Creamy Tuscan Shrimp Recipe

Description

This Creamy Tuscan Shrimp recipe is an easy weeknight meal that’s bursting with flavor. Tender shrimp are bathed in a luscious, creamy sauce with sun-dried tomatoes, spinach, and garlic, making it utterly irresistible. Serve it over pasta, rice, or with crusty bread to soak up every last drop of that incredible sauce.

1 pound shrimp (I use 3140 count size) thawed & peeled, tails optional
2 tablespoons butter
1 teaspoon flour
45 cloves garlic minced
1 cup heavy/whipping cream
1/2 teaspoon lemon juice
1/4 teaspoon Italian seasoning
1/4 cup chopped or julienned sun-dried tomatoes
12 cups (packed) fresh baby spinach
Handful fresh basil cut into thin strips
Salt & pepper to taste


Instructions

Prepare your shrimp.

Melt butter in a skillet. Stir in flour until smooth.

Add garlic and cook briefly.

Stir in cream, lemon juice, Italian seasoning, and sun-dried tomatoes. Simmer.

Add shrimp and cook until done.

Add spinach and basil; cook until wilted. Season and serve.

Notes

Don’t overcook the shrimp. They cook quickly, so keep an eye on them.

Use a large skillet to give the shrimp and sauce plenty of space.

If your sauce is too thick, add a splash more chicken broth.

Taste and adjust the seasoning as needed, adding more salt and pepper to suit your taste.

Freshly grated Parmesan cheese melts much better than pre-shredded cheese.
