Ingredients

4 salmon fillets (skin-on or skinless)
2 tbsp olive oil
2 tbsp unsalted butter
4 cloves garlic, minced
1/2 cup chicken broth
1 tbsp fresh lemon juice
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes in oil, drained and chopped
2 cups fresh baby spinach
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Gently pat your salmon fillets dry and season them nicely. Sear the salmon in a hot skillet until cooked through, then set aside.

Melt butter in the same pan and sauté garlic, then deglaze with broth and lemon juice.

Stir in cream and Parmesan to create a luscious sauce, then add sun-dried tomatoes and spinach until wilted.

Notes
