Description

Ingredients

• 1.5 lbs boneless skinless chicken breasts, sliced horizontally into cutlets • 2 tbsp olive oil • 2 tbsp unsalted butter • 4 cloves garlic, minced • 1/2 cup low-sodium chicken broth • 1 tbsp fresh lemon juice • 1 cup heavy cream • 1/2 cup grated Parmesan cheese • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped • 2 cups fresh baby spinach • 1 tsp Italian seasoning • Salt and black pepper to taste


Instructions

1. Gently season your chicken cutlets with Italian seasoning, salt, and pepper on both sides.

2. Warm the olive oil in a spacious skillet over medium-high heat. Add the chicken cutlets and cook them for about 4-5 minutes on each side until they turn a lovely golden brown and are cooked through. Then, carefully place the chicken onto a plate.

3. In the same skillet, melt the butter over medium heat. Add the minced garlic and saut for just a minute until its wonderful aroma fills the air.

4. Pour in the chicken broth and lemon juice, making sure to gently scrape up any delicious browned bits from the bottom of the pan.

5. Stir in the heavy cream and allow it to reach a gentle simmer. Then, lower the heat and whisk in the Parmesan cheese until the sauce is beautifully smooth.

6. Add the sun-dried tomatoes and spinach, stirring them in and letting them cook for about 2 minutes, just until the spinach begins to wilt.

7. Finally, return the chicken cutlets to the skillet. Spoon the luscious sauce over the chicken, let it simmer for another 2 minutes, and serve warm.

Notes

Don’t Overcrowd the Pan: When searing the chicken, cook it in batches if necessary to avoid overcrowding the skillet. This allows each piece to brown properly instead of steaming.

Watch the Garlic: Garlic can burn quickly. Sauté it until fragrant but be mindful of the heat to prevent any bitterness.

Sauce Consistency: If your sauce seems too thick after adding the Parmesan, you can thin it out with a tiny splash more chicken broth or cream. If it’s too thin, let it simmer uncovered for a minute or two longer to reduce.

Resting the Chicken: While we’re returning the chicken to the sauce, if you were serving it as a standalone cutlet, allowing it to rest for a few minutes after searing would help keep it extra juicy.
