Ingredients
10 oz frozen chopped spinach, thawed and squeezed dry
1 can (14 oz) artichoke hearts, drained and chopped
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
2 cloves garlic, minced
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
Salt and black pepper to taste
Tortilla chips, pita chips, or baguette slices for serving
Instructions
First, preheat your oven to 375F and prepare a baking dish.
In a bowl, combine the cream cheese, sour cream, mayonnaise, and garlic until smooth.
Gently mix in the spinach and artichoke hearts.
Fold in most of the cheeses and season.
Place the mixture into the dish and top with the remaining cheese.
Bake for 20 to 25 minutes until warm and golden.
Notes
Squeeze that spinach! I can’t stress this enough: thoroughly squeeze the thawed spinach to remove excess water. This is the secret to a dip that’s creamy and not watery.
Room Temperature Cream Cheese: Ensure your cream cheese is truly softened. This makes it so much easier to get a smooth, lump-free base.
Cheese Layer: Spreading some cheese within the dip and then topping it off creates a wonderful layered cheesy experience.
Golden Brown Perfection: Keep an eye on the dip during the last few minutes of baking. You’re looking for that gorgeous golden-brown color on top.
Rest Briefly: Letting the dip rest for a few minutes after it comes out of the oven allows it to set slightly and makes it easier to scoop.
