Ingredients
3 tablespoons butter
2 tablespoons olive oil
1 medium onion (finely chopped)
2 cloves garlic (minced)
3 medium russet potatoes (peeled and diced)
2 carrots (peeled and diced)
2 celery stalks (diced)
4 cups broth (vegetable or chicken )
2 bay leaves
1 teaspoon dried thyme
2 cups corn kernels (fresh or frozen)
1 cup heavy cream
1/2 teaspoon paprika (optional)
Salt and pepper to taste
Chopped fresh parsley or chives for garnish
Grated cheddar cheese (optional)
Instructions
Warm butter and olive oil in a large pot over medium heat.
Saut chopped onion until translucent, about 3 minutes. Add minced garlic and saut for 1 minute until fragrant.
Stir in diced potatoes, carrots, and celery. Saut for about 5 minutes until vegetables begin to soften.
Pour in broth, add bay leaves and thyme. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until potatoes are tender.
Stir in corn kernels and simmer for 5 more minutes.
Pour in heavy cream and stir gently. Season with salt, pepper, and paprika if using. Remove and discard bay leaves.
Ladle chowder into bowls, garnish with parsley or chives and cheese if desired. Serve hot with your favorite sides.
Notes
Try to dice your vegetables into roughly uniform sizes so they cook evenly.
Use a pot large enough to comfortably hold all the ingredients. Overcrowding can lead to steaming rather than sautéing, affecting flavor development.
Seasoning is crucial! Taste your chowder before serving and adjust salt and pepper as needed.
Once you add the broth, a gentle simmer is all you need. Boiling vigorously can break down the vegetables too much.
Don’t forget to fish out those bay leaves before serving; they’ve done their job infusing flavor and aren’t pleasant to bite into.
