Ingredients
1 c plain Greek yogurt, whole milk/full fat
3/4 c peanut butter
1/4 c vanilla protein powder
1–2 T maple syrup or honey
1/4 tsp vanilla extract
1 c dark chocolate chips
flaked sea salt, optional
Instructions
Combine the Greek yogurt, peanut butter, protein powder, your choice of sweetener, and vanilla extract in a bowl. Stir until the mixture is smooth and creamy.
Spread the yogurt mixture evenly onto a quarter sheet pan lined with parchment paper. Aim for a thickness between 1/4 and 1/2 inch, according to your preference.
Melt the dark chocolate chips in a microwave safe bowl, heating in 30-second intervals and stirring in between, being careful not to overheat.
Spread the melted chocolate evenly over the peanut butter yogurt layer.
Freeze the bark for at least 2-3 hours, or until completely firm.
Once frozen, sprinkle with flaked sea salt if desired. Cut the bark into pieces with a sharp knife or break it apart with your hands. Enjoy.

For a smoother consistency, ensure your peanut butter is at room temperature and easily stirrable before mixing it with the yogurt.
