Creamy Mushroom Tagliatelle with Truffle

3 tablespoons unsalted butter
12 oz cremini mushrooms, sliced
1 large shallot, minced
4 garlic cloves, thinly sliced
2/3 cup mushroom broth or vegetable broth
1 tablespoon lemon juice
1 cup reserved pasta water
1 cup heavy cream
2 teaspoons Dijon mustard
1 tablespoon truffle puree
8 oz dried egg tagliatelle pasta
12 teaspoons lemon juice, to taste
Kosher salt and freshly cracked black pepper
Parmesan cheese, for serving
Minced chives or parsley, for serving


Instructions

Cook the pasta. Boil salted water, add pasta, and cook until al dente. Save 1 cup of pasta water, then drain.

Brown the mushrooms. Melt butter in a skillet over medium-high heat. Add mushrooms, cook undisturbed for 3-4 minutes until browned, then stir and brown all over.

Build the sauce. Add shallots and garlic to the skillet, cook for 2 minutes until softened. Stir in broth and 1 tablespoon lemon juice, scraping browned bits. Simmer until reduced. Stir in reserved pasta water, heavy cream, Dijon mustard, and truffle puree. Simmer gently. Season with salt and pepper.

Finish the pasta. Add cooked pasta to the sauce and toss to coat. Simmer for 2-3 minutes until the sauce thickens and clings to the pasta. Add more lemon juice if desired and adjust seasoning.

Serve. Portion pasta into bowls and top with Parmesan cheese and chives or parsley.

Notes

Don’t overcrowd the pan when cooking the mushrooms. Cook them in batches if necessary to ensure they brown properly and develop a delicious, savory flavor.

Taste and adjust seasoning throughout the cooking process, especially after adding the Parmesan cheese, as it can be quite salty.

When tossing the pasta with the sauce, do so gently to avoid breaking the strands and to ensure each piece is perfectly coated.

Truffle oil’s flavor can be quite potent. Start with a smaller amount and add more if desired, tasting as you go.
