Ingredients
• 2 tbsp olive oil
• 2 garlic cloves, crushed or minced
• 2 green onions, sliced (white and green parts)
• 1/2 cup kimchi, chopped
• 1 tbsp gochujang or sriracha sauce
• 1 tbsp soy sauce
• 1/2 tsp granulated sugar
• 1/3 cup heavy cream (whipping cream) (80 ml)
• 1/2 cup shredded mozzarella cheese, optional
• 2 packs frozen udon noodles (total of 400-500g)
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute.
2. Add green onions and chopped kimchi. Cook for 1-2 minutes, stirring.
3. Whisk together gochujang (or sriracha), soy sauce, and sugar in a small bowl. Pour into the skillet and stir for 30 seconds.
4. Lower the heat to low, stir in the heavy cream, and let it simmer for 1 minute.
5. Meanwhile, pour boiling water over the frozen udon noodles in a separate bowl. Let them soften for 30 seconds, then drain. Add the udon to the skillet and toss to coat them in the sauce.
6. Stir in the mozzarella cheese until it melts.
7. Serve immediately, garnished with reserved kimchi and green onions.
Notes
Chop your kimchi into bite-sized pieces before adding it to the skillet. This ensures it disperses evenly throughout the dish.
If your sauce seems a little too thick after adding the cream, you can add a tablespoon or two of the reserved udon cooking water (if you didn’t drain it immediately) or a splash of milk to reach your desired consistency.
Sautéing the garlic first releases its wonderful aroma and flavor. Be careful not to burn it, as this can make it bitter.
When adding the udon noodles to the sauce, toss them gently to coat without breaking them. We want those lovely thick strands intact!
These noodles are best enjoyed right away when the sauce is warm, the noodles are perfectly chewy, and the cheese (if using) is delightfully melty.
