Ingredients
3 cups frozen corn kernels
¼ cup chopped pickled jalapenos
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
8 ounces grated provolone or Monterey jack cheese
8 ounces cream cheese softened to room temperature
Fritos or other chips/crackers for dipping
Instructions
Preheat your oven to 375F.
Lightly grease a medium baking dish with cooking spray.
In a bowl, mix all ingredients, making sure to fully incorporate the softened cream cheese. Reserve a bit of cheese for the topping.
Press the mixture into your prepared baking dish, and sprinkle the remaining cheese on top.
Bake uncovered for 30-40 minutes, until bubbly and browned.
Let the dip cool for 5 minutes before serving with your favorite chips or crackers.
Notes
Remove the seeds and membranes from the jalapenos for a less spicy dip.
Keep an eye on the dip during baking to prevent it from drying out. You want it bubbly but still creamy.
Softened cream cheese and room-temperature ingredients will help your dip mix more smoothly.
The dip can be assembled a few hours ahead and baked just before serving.
Use a high-quality cheese blend for the best flavor.
