Ingredients
1 can (15 oz) sweet whole kernel corn, drained
1 can (14.75 oz) cream-style corn
1 box (8.5 oz) Jiffy corn muffin mix
1 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
1 cup shredded cheddar cheese
2 large eggs, beaten
Instructions
Begin by preheating your oven to 350F (175C) and preparing your baking dish. In a large bowl, combine the beaten eggs, melted butter, and sour cream until smooth. Gently mix in the whole kernel corn, cream-style corn, and corn muffin mix until just combined. Fold in half a cup of shredded cheddar cheese, then pour the batter into your prepared dish. Bake for 45-50 minutes until golden brown, adding the remaining cheese in the final 5 minutes of baking.
Notes
For a touch of heat, a pinch of cayenne pepper or a small can of diced green chilies (drained) can be stirred into the batter.
If you’re not a fan of cheddar, Monterey Jack or a Colby Jack blend would also be delightful.
For a slightly different flavor profile, a tablespoon of chopped fresh chives or parsley can be folded in before baking.
