Ingredients
• 3 lbs Russet or Yukon Gold potatoes, peeled and sliced 1/8-inch thick
• 2 tbsp unsalted butter
• 3 cloves garlic, minced
• 1.5 cups heavy cream
• 1/2 cup whole milk
• 1/4 tsp ground nutmeg
• 1.5 cups Gruyère cheese, shredded
• 1 cup sharp cheddar cheese, shredded
• Salt and black pepper to taste

Instructions
Set your oven to 375F (190C) and prepare a 9×13-inch baking dish by buttering it.
Gently melt butter in a saucepan over medium heat, then add minced garlic and cook just until fragrant, about 1 minute.
Whisk together the heavy cream, whole milk, nutmeg, salt, and pepper, bringing the mixture to a soft simmer for 2 minutes before taking it off the heat.
Begin by arranging one third of your sliced potatoes in a single, slightly overlapping layer within the prepared baking dish.
Pour one third of the warm cream mixture over the potato layer and sprinkle with one third of the shredded Gruyre and cheddar cheeses.
Continue this layering process two more times, using up the remaining potatoes, cream mixture, and cheese.
Cover the dish securely with aluminum foil and bake for 45 minutes, then remove the foil and continue baking for another 20-25 minutes until the potatoes are tender and the top is beautifully bubbly and golden.
Notes
Uniform slices are key: For the most even cooking and a beautiful presentation, try to slice your potatoes to a consistent thickness of about 1/8 inch. A mandoline slicer can be very helpful here, but a sharp knife and a steady hand will also do the trick.
Don’t overcrowd: While you want a generous amount of potatoes, ensure you don’t pack the dish so tightly that the cream can’t circulate and cook them through.
