- 2 Tablespoons Maple Syrup
- 1 Tablespoon Coconut Aminos or Low Sodium Soy Sauce
- 1 Tablespoon Rice Vinegar
- 4 Green Onions, thinly sliced (green and white parts separated)
Instructions
Step 1: Boil the Noodles
Begin by boiling water in a large pot for the noodles. Cook according to package directions (usually around 4 minutes). Just before draining, reserve 1/2 cup of the pasta water to adjust the sauce consistency later.
Step 2: Prep the Creamy Sauce
In a blender, combine the low-fat cottage cheese, gochujang, and 1/4 cup of water. Blend until the mixture is completely smooth and velvety. Set aside.
Step 3: Whisk the Beef Glaze
