Creamy Coleslaw Recipe

  • Total Time: 1 hour 15 minutes
  • Yield: Approximately 11 cups 1x

Description

This vibrant coleslaw is the perfect balance of creamy, tangy, and slightly sweet, making it an irresistible side dish for any meal. With its satisfying crunch and colorful presentation, it’s sure to become a fast favorite for picnics, barbecues, and everyday dinners.

Ingredients

Scale

3/4 cup mayonnaise (slightly scant)
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
3/4 teaspoon celery seeds
1/4 teaspoon sea salt
Freshly ground black pepper
6 cups shredded green cabbage
2 cups shredded red cabbage
2 medium carrots (julienned or shredded on the large holes of a box grater)
1 cup thinly sliced red onion

Instructions

Prepare the coleslaw dressing. In a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, celery seeds, salt, and freshly ground black pepper.

Assemble the coleslaw. In a large bowl, combine the shredded green cabbage, shredded red cabbage, julienned carrots, and thinly sliced red onion.

Pour the prepared dressing over the vegetable mixture and toss until everything is well coated. Season with additional salt and pepper to your liking.

Chill the coleslaw in the refrigerator for at least 1 hour before serving. This resting period allows the cabbage to soften slightly and the flavors to develop beautifully.

Notes

For the best texture, aim for uniformly shredded or thinly sliced vegetables. A mandoline slicer or the shredding attachment on a food processor can make quick work of this, but a sharp knife and a little patience work just as well.

While it’s tempting to dig in immediately, allowing the coleslaw to chill for at least an hour is essential. This lets the dressing work its magic, tenderizing the cabbage slightly and allowing all the flavors to harmonize.

Before serving, always give your coleslaw a final taste. Cabbage can vary in sweetness, and your personal preference for tanginess might differ. Adjust salt, pepper, or vinegar as needed.

Use fresh, crisp vegetables for the best flavor and texture. Pre-shredded cabbage can sometimes be a little drier and less crisp.
