Ingredients
12 oz wide egg noodles
3 cups cooked chicken breast, shredded or cubed
1 can (10.5 oz) condensed cream of chicken soup
1 can (10.5 oz) condensed cream of mushroom soup
1 cup sour cream
1/2 cup whole milk
1.5 cups frozen peas and carrots, thawed
1 cup sharp cheddar cheese, shredded
1/2 tsp garlic powder
Salt and black pepper to taste
1 cup crushed Ritz crackers tossed with 3 tbsp melted butter
Instructions
Preheat your oven to 350 degrees Fahrenheit and lightly prepare a 9×13 inch baking dish.
Cook the egg noodles in boiling salted water for 2 minutes less than what the package suggests and then drain them.
In a spacious bowl, gently combine the cream of chicken soup, cream of mushroom soup, sour cream, milk, garlic powder, salt, and black pepper.
Carefully stir in the cooked egg noodles, shredded chicken, thawed peas and carrots, and shredded cheddar cheese until everything is nicely mixed.
Spoon the entire mixture into the prepared baking dish and finish by topping it evenly with the buttered Ritz cracker crumbs.
Bake uncovered for about 25 to 30 minutes, or until the casserole is bubbling beautifully and the cracker topping turns a lovely golden brown.
Notes
Be sure to cook them just shy of fully tender, as they will continue to cook in the oven.
While sharp cheddar is fantastic, a blend of cheddar and Monterey Jack, or even some Gruyere, would be delicious.
Make sure your chicken is cut into uniform pieces or shredded finely so it heats through evenly with the noodles and vegetables.
Thoroughly drain the noodles after boiling. Excess water can make the casserole too soupy.
