Ingredients
8 oz pasta (fusilli or rotini)
1 lb boneless, skinless chicken breasts, cubed
3 tbsp extra-virgin olive oil
4 cloves garlic, minced
1 cup Boursin cheese (herb-infused)
1/2 cup water or broth
1/2 cup sun-dried tomatoes, minced
2 cups baby spinach
1 tbsp fresh chives, minced
Kosher salt and black pepper to taste
Instructions
Cook pasta in salted water until al dente, reserving 1 cup pasta water.
Heat olive oil in a skillet, cook chicken until golden, then add garlic and sauté.
Stir in Boursin cheese until melted, add reserved pasta water, and mix in sun-dried tomatoes.
Toss cooked pasta into the skillet, coating it in the sauce. Stir in spinach until wilted.
Season with salt and pepper. Garnish with fresh chives before serving.
