Ingredients
1.5 lbs boneless skinless chicken breasts, halved horizontally
8 oz cremini or button mushrooms, sliced
2 tbsp unsalted butter
1 tbsp olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1 cup low-sodium chicken broth
3/4 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1 tsp dried thyme
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Instructions
Gently season chicken breasts with salt, pepper, and thyme.
Saut chicken in butter and oil until golden, then set aside.
Cook mushrooms and onion until tender, then add garlic and cook until fragrant.
Deglaze with broth and cream, simmer until thickened, then stir in Parmesan.
Return chicken to the skillet and spoon sauce over it, finishing with fresh parsley.

Alternatively, you could whisk together 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering sauce, letting it thicken for a minute.
