2.25 cups all-purpose flour

1/2 cup granulated sugar
2 large eggs
1.5 tsp pure vanilla extract
1 cup white chocolate chips
1 cup dried cranberries (crasins)
1/2 cup chopped pecans or walnuts (optional)
Instructions
Begin by preheating your oven to 350F (175C) and preparing two large baking sheets with parchment paper.
In a medium bowl, gently whisk together the flour, baking soda, and salt.
In a larger bowl, beat the softened butter with both the brown sugar and granulated sugar for about 2 minutes, until the mixture is light and fluffy.
Add the eggs one at a time, followed by the vanilla extract, beating well after each addition.
Slowly incorporate the flour mixture into the wet ingredients until the dough just comes together.
Gently fold in the white chocolate chips, dried cranberries, and any optional chopped nuts.
Spoon rounded tablespoons of dough onto the prepared baking sheets, leaving a couple of inches between each cookie. Bake for 10 to 12 minutes, or until the edges are golden brown. Let them cool on wire racks.
