Ingredients
2 cups all-purpose flour
6 Tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter (, FROZEN)
1/3 cup sour cream (, light, regular, or sub Plain Greek Yogurt)
1/3 cup heavy whipping cream
1 large egg
1 teaspoon vanilla extract
zest of 1 orange
1 cup fresh cranberries* (halved)
2/3 cup powdered sugar
1 Tablespoon freshly squeezed orange juice
Instructions
Preheat your oven to 400 degrees F and prepare a baking sheet with parchment paper.
Whisk together flour, sugar, baking powder, and salt in a large bowl.
Grate the frozen butter into the flour mixture and combine until it looks like coarse meal; chill the mixture.
In a separate small bowl, mix sour cream, heavy cream, egg, vanilla extract, and orange zest.
Pour the wet ingredients over the flour mixture and stir gently until just combined.
Fold in the fresh cranberries.
Gently bring the dough together on a floured surface, pressing or rolling it into a 1-inch thick circle.
Cut the dough into 8 wedges and place them on the prepared baking sheet.
Brush the tops with a bit of heavy cream and bake for 15-18 minutes until golden.
Let the scones cool for at least 10 minutes before drizzling with the glaze.
To make the glaze, combine powdered sugar and orange juice until smooth, adjusting thickness as needed.
Notes
Ensure your butter is truly frozen and keep your dough chilled as much as possible. This is crucial for a flaky texture.
Mix just until the ingredients come together. A slightly shaggy dough is better than a smooth, overworked one.
Watch your scones closely during the last few minutes of baking. You want them to be golden brown on top and around the edges, indicating they are fully baked.
Let the scones rest for at least 10 minutes after baking before glazing. This allows them to set up slightly, so the glaze doesn’t melt off entirely.
