Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup unsalted butter, softened
1 tbsp orange zest
3/4 cup fresh orange juice
1 large egg
1.5 cups fresh cranberries, coarsely chopped
1/2 cup chopped walnuts or pecans (optional)
1/2 cup powdered sugar + 1 tbsp orange juice (for glaze)
Instructions
First, preheat your oven to 350F (175C) and prepare a 9×5-inch loaf pan.
Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
Next, cut in the softened butter with a pastry blender until it resembles coarse crumbs.
In a separate bowl, whisk together the orange zest, orange juice, and egg, then gently mix this into the dry ingredients until just combined.
Finally, fold in the cranberries and nuts if using, pour the batter into the prepared pan, and bake for 55 to 60 minutes.
Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to finish cooling, then drizzle with the prepared glaze.
