Ingredients
3 lbs sweet potatoes, peeled and cubed
1/2 cup granulated sugar
1/4 cup unsalted butter, melted
1/3 cup milk
2 large eggs
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup packed light brown sugar (topping)
1/3 cup all-purpose flour (topping)
1/3 cup unsalted butter, melted (topping)
1 cup chopped pecans (topping)
Instructions
Begin by preheating your oven to 350 degrees Fahrenheit and lightly greasing a 9×13 inch baking dish.
Boil your peeled and cubed sweet potatoes until they are tender, then drain and mash them thoroughly.
In a large bowl, combine the mashed sweet potatoes with granulated sugar, a quarter cup of melted butter, milk, eggs, vanilla extract, and cinnamon until smooth. Spread this mixture evenly into your prepared baking dish.
For the topping, mix together the light brown sugar, flour, a third cup of melted butter, and chopped pecans until a crumbly texture forms. Sprinkle this pecan topping over the sweet potato base.
Bake the casserole uncovered for 30 to 35 minutes, or until the topping is golden brown and the casserole is warmed through.
