1 lb mild or spicy turkey Italian sausage (or beef sausage), removed from casings
1 small yellow onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
4 cups low-sodium chicken broth
1 tsp Italian seasoning
1 package (19 oz) refrigerated cheese tortellini
4 oz cream cheese, softened and cubed
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese


Instructions

First, brown the Italian sausage in a skillet and then add it to your slow cooker.
Next, combine the diced onion, minced garlic, diced tomatoes, tomato sauce, chicken broth, and Italian seasoning in the slow cooker with the sausage.
Cook on low for 5 to 6 hours or on high for 2.5 to 3 hours.
Thirty minutes before you’re ready to serve, stir in the refrigerated cheese tortellini, softened cream cheese, and chopped spinach, allowing them to cook until tender and melted.
Finish by topping each serving with grated Parmesan cheese.

Notes

We love using mild or spicy turkey Italian sausage for a lighter option, but good quality beef sausage works wonderfully too. Removing the casings allows the sausage to crumble and distribute its flavor beautifully throughout the soup.
