2 tablespoons packed light brown sugar
2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice (or a mix of cinnamon, ginger, nutmeg, and cloves)
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/4 cups whole milk
1/2 cup 100% pure pumpkin puree (not pumpkin pie filling)
2 large eggs
3 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
Butter or oil for the griddle
Maple syrup for serving


Instructions

1. In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, baking soda, and salt until well combined.

2. In a separate bowl, whisk together the milk, pumpkin puree, eggs, melted butter, and vanilla extract until smooth.

3. Pour the wet ingredients into the dry ingredients.

4. Gently fold the batter together with a spatula or whisk until just combined. It’s okay if it’s a little lumpy; do not overmix.

5. Let the batter rest for 5 minutes.

6. Heat a lightly greased skillet or griddle over medium heat.

7. Pour about 1/3 cup of batter for each pancake onto the hot surface.

8. Cook for 2 to 3 minutes until the edges are set and bubbles appear on the surface.

9. Flip carefully and cook for another 1 to 2 minutes until golden brown.

10. Serve immediately with butter and maple syrup.

Notes

Watch the Heat: Keep your griddle at a consistent medium heat. If it’s too hot, the outside will burn before the inside cooks. If it’s too low, the pancakes will be pale and won’t get that lovely fluffiness.
