Ingredients
2.25 cups all-purpose flour
1.5 tsp cornstarch
1 tsp baking powder
1.5 tsp pumpkin pie spice
1/2 tsp salt
3/4 cup (1.5 sticks) unsalted butter, melted
1 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup canned pumpkin puree
1 large egg
2 tsp vanilla extract
Cinnamon Sugar Topping: 2 tbsp granulated sugar + 1 tsp ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Lightly grease and flour a baking pan, or line it with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, pumpkin pie spice, and salt.
In a separate larger bowl, combine the melted unsalted butter, packed light brown sugar, and granulated sugar. Stir in the canned pumpkin puree, large egg, and vanilla extract. Whisk until smooth and well incorporated.
Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Be careful not to overmix; a few streaks of flour are perfectly fine.
Pour the batter into your prepared baking pan and spread it evenly. In a small bowl, combine the ingredients for the cinnamon sugar topping: 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Sprinkle this mixture evenly over the top of the batter.
Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the pan from the oven and let the bars cool completely in the pan on a wire rack.
