Ingredients
1.5 cups canned pumpkin puree
1.5 cups granulated sugar
1/2 cup vegetable oil
2 large eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp salt
1 cup semi-sweet chocolate chips
Instructions
Prepare your oven by preheating it to 350F (175C) and lining a 12-cup muffin tin with paper liners.
In a spacious bowl, combine the pumpkin puree, granulated sugar, vegetable oil, and eggs until you achieve a smooth consistency.
In another bowl, whisk together the flour, baking soda, ground cinnamon, pumpkin pie spice, and salt.
Gently fold the dry ingredients into the wet mixture until just combined, then carefully stir in the chocolate chips.
Distribute the batter evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Make sure you are using pure pumpkin puree and not pumpkin pie filling, as the latter contains added sugars and spices that will alter the flavor and texture of your muffins.
A neutral-flavored oil like vegetable or canola oil ensures a wonderfully moist muffin without imparting any unwanted taste.
