Ingredients
1 cup canned pumpkin puree
2 medium ripe bananas, mashed (about 1 cup)
1/3 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp salt
Instructions
Prepare your oven by preheating it to 350F (175C) and greasing a 9×5-inch loaf pan.
In a large bowl, combine the mashed bananas, pumpkin puree, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract, whisking until smooth.
In a separate medium bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, and salt.
Gently fold the dry ingredients into the wet mixture with a spatula, mixing just until they are combined and avoiding overmixing.
Pour the batter into the prepared loaf pan and spread the top evenly.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out without any wet batter.
Let the bread cool in the pan for 10 minutes before moving it to a wire rack to cool completely before slicing.
Notes
Be sure to use pure pumpkin puree, not pumpkin pie filling, as the latter contains added sugars and spices that could alter the flavor. It brings a wonderful moisture and earthy depth to our bread.
The riper the bananas, the sweeter and more flavorful your bread will be. Look for bananas with plenty of brown spots – they mash beautifully and lend an irresistible sweetness.
Melted butter contributes to the bread’s incredible moistness and rich flavor. Unsalted gives us control over the final salt content.
Packed brown sugar adds a lovely caramel undertone and extra moisture, complementing the spices and banana perfectly.
