3 cups cooked turkey meat, shredded or cubed
1 leftover turkey carcass/bones (or 6 cups low-sodium chicken broth)
2 tbsp olive oil
1 large yellow onion, diced
3 large carrots, sliced into coins
3 stalks celery, chopped
3 cloves garlic, minced
1.5 cups egg noodles or cooked white rice
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Warm olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook for 6 to 8 minutes until they soften.

Mix in the minced garlic, thyme, oregano, salt, and pepper, cooking for 1 minute until fragrant.

Pour in the broth and add the bay leaf. Bring to a boil, then lower the heat, cover, and simmer for 15 minutes until the vegetables are tender.

Add the leftover turkey and egg noodles, and cook uncovered for 8 to 10 minutes until the noodles are done.

Remove the bay leaf, season with salt and pepper to your liking, and sprinkle with fresh parsley before serving.
