1/2 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 tsp vanilla extract
1 cup semi-sweet chocolate chips
12 large marshmallows, cut in half horizontally
Instructions
Combine flour, cocoa powder, hot chocolate mix, baking powder, and salt in a bowl.
Cream softened butter with granulated and brown sugars in a large bowl until smooth.
Mix in eggs and vanilla extract.
Gradually add the dry ingredients to form a soft dough, then stir in chocolate chips and chill for 1 hour.
Preheat your oven to 350F and prepare baking sheets.
Drop dough balls onto the sheets and bake for 8 minutes, then place marshmallow halves on top.
Bake for another 3-4 minutes until marshmallows are soft and puffed, then let cool.
Notes
For a richer chocolate flavor: Consider adding a tablespoon of instant espresso powder to the dry ingredients to deepen the chocolate notes.
A touch of spice: A pinch of cinnamon or a tiny dash of cayenne pepper can add a surprising and warming complexity.
Different chocolate chips: Feel free to swap the semi-sweet chocolate chips for milk chocolate or dark chocolate chips, depending on your preference.
