Enjoy these Cozy High Protein Pumpkin Muffins, a perfect blend of warm spices, sweet pumpkin, and a satisfying protein boost. Ideal for breakfast, snack, or post-workout treat.
Ingredients
1.5 cups whole wheat flour or oat flour
2 scoops (about 60g) vanilla or unflavored protein powder
1 tsp baking soda
1.5 tsp pumpkin pie spice
1/2 tsp salt
1 cup canned pumpkin puree
3/4 cup plain Greek yogurt
1/2 cup pure maple syrup or honey
2 large eggs
1/4 cup milk
1/3 cup dark chocolate chips or chopped walnuts (optional)
Instructions
Combine the dry ingredients in one bowl and the wet ingredients in another.
Gently mix the dry into the wet, then add any optional mix ins.
Bake until a toothpick comes out clean and let them cool on a rack.
Notes
Whole wheat flour offers a heartier texture, while oat flour provides a slightly sweeter, nuttier flavor and a wonderfully tender crumb. Both are fantastic choices!
Choose a brand you enjoy the taste of, as it will subtly influence the final flavor.
Make sure you’re using 100% pure pumpkin puree, not pumpkin pie filling, as the latter contains added sugar and spices.
