Description
This Cozy Guinness Beef Stew is a soul-satisfying meal with tender beef, aromatic vegetables, and a rich, malty gravy.
Ingredients
• 2.5 lbs beef chuck roast, cut into 1-inch cubes
• 3 tbsp all-purpose flour
• 2 tbsp olive oil
• 1 large yellow onion, chopped
• 3 cloves garlic, minced
• 1.5 cups non-alcoholic dark malt beverage or rich extra-dark beef stock
• 4 cups low-sodium beef broth
• 2 tbsp tomato paste
• 1 tbsp Worcestershire sauce
• 1 tsp dried thyme
• 4 large carrots, cut into 1-inch chunks
• 3 stalks celery, sliced
• 1.5 lbs Yukon Gold potatoes, cubed
• Salt and black pepper to taste
Instructions
Gently combine beef cubes with flour, salt, and pepper.
Brown the beef in a Dutch oven with olive oil, then set aside.
Saut onions and garlic in the same pot until soft.
Mix in tomato paste, dark malt beverage or beef stock, and beef broth, deglazing the pot.
Return the beef, add Worcestershire sauce and thyme, bring to a simmer, cover, and cook for an hour.
Finally, add carrots, celery, and potatoes, cover, and simmer until everything is tender and the stew has thickened beautifully.
Notes
Beef Chuck Roast – This cut is ideal for stewing as its connective tissues break down during long, slow cooking, resulting in incredibly tender and flavorful beef. Cut it into roughly 1-inch cubes for even cooking.
All-Purpose Flour – Used to lightly coat the beef before browning, it helps to create a beautiful crust and also thickens the stew as it cooks.
Non-Alcoholic Dark Malt Beverage or Rich Extra-Dark Beef Stock – This is the secret to that wonderfully deep, malty flavor without any alcohol. If you can’t find it, a rich, dark beef stock will also work beautifully.
Low-Sodium Beef Broth – Using low-sodium broth gives you more control over the final saltiness of the stew.
Yukon Gold Potatoes – These potatoes are wonderfully creamy and hold their shape well during cooking, making them perfect for stews.
Add-ins and Substitutions: If you enjoy a touch more sweetness, a splash of balsamic vinegar towards the end of cooking can add a lovely depth. For a bit more herbaceous brightness, fresh parsley chopped and stirred in just before serving is a beautiful touch. You could also swap out some of the potatoes for parsnips or sweet potatoes for a different twist.
