Ingredients
1.5 lbs boneless skinless chicken breasts
1 medium yellow onion, diced
1 cup carrots, sliced
1 cup celery, sliced
2 cloves garlic, minced
1 can (10.5 oz) condensed cream of chicken soup
2 cups low-sodium chicken broth
1 tsp dried thyme
1 tsp poultry seasoning
1/2 cup peas, frozen
1/2 cup heavy cream
1 can (16.3 oz) refrigerated canned biscuit dough

Instructions
Arrange the chicken breasts at the base of your slow cooker.
Layer the diced onion, sliced carrots, sliced celery, minced garlic, thyme, poultry seasoning, salt, and pepper on top of the chicken.
Pour the condensed cream of chicken soup and chicken broth over the ingredients, gently mixing them around the chicken.
Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken and vegetables are tender.
Take out the chicken, shred it using two forks, and return it to the slow cooker along with the frozen peas and heavy cream.
Cut each refrigerated biscuit into 8 small pieces and scatter them evenly over the simmering soup mixture.
Cover and cook on high for another 45 to 60 minutes, resisting the urge to open the lid, until the dumplings are puffy and fully cooked.
